Preparation

Start by chopping the onion and mincing the garlic. In a mixing bowl, combine the ground pork and ground turkey (if using). Add the chopped onion, minced garlic, and all the spices, including salt, black pepper, paprika, cayenne pepper, thyme, oregano, cumin, coriander, celery seed, mustard powder, onion powder, and garlic powder. Mix well until all the ingredients are evenly distributed.

Forming the Sausage

If you’re not using sausage casings, you can skip this step. However, if you want to have traditional-looking breakfast sausage, you’ll need to stuff the mixture into casings. Once the sausage stuffer is filled, attach the sausage casings to the end. Push the mixture through the stuffer and into the casings, forming links as you go. If using a Ziploc bag, pipe the mixture into the bag and twist the ends to form links.
