Ingredients:

– 4 cups of chopped watermelon
– 1 cup of fresh mint leaves
– 2 tablespoons of sugar (adjust to taste)
– 1 cup of water
– Ice cubes

Instructions:

1. Begin by peeling and chopping the watermelon into small pieces. Place the chopped watermelon in a blender.

2. Add the fresh mint leaves to the blender and pulse a few times to chop them up. You don’t want the mint to be completely blended, as you want to maintain some texture.

3. Pour 1 cup of water into the blender and add 2 tablespoons of sugar. Blend the mixture until smooth. Taste and adjust the sweetness if necessary.

4. Strain the mixture through a fine-mesh sieve or cheesecloth to remove the seeds and mint stems. Be sure to press on the solids to extract as much liquid as possible.

5. Transfer the strained watermelon and mint mixture to a clean container and refrigerate for at least 2 hours, or until chilled.

6. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, you can freeze the mixture in a shallow dish and stir it every 30 minutes until it reaches the desired consistency.

7. Once the sorbet is ready, transfer it to a freezer-safe container and freeze for at least 4 hours, or until firm.

8. Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly. This will make it easier to scoop.

9. Serve the watermelon and mint sorbet in chilled bowls or glasses and garnish with additional mint leaves if desired.
