Add water as needed to get a smooth, creamy batter. The batter should be thick, but it should also be easy to pour.

4. Fermentation: Transfer the batter to a clean, dry jar or container. Cover it with a cloth or lid and let it ferment at room temperature for about 8 to 12 hours. The fermentation process can be longer or shorter, depending on the room temperature and the specific conditions.

5. Seasoning the Batter: Once the batter has fermented, add salt to taste and mix well. You can also add a pinch of asafoetida (hing) to the batter for added flavor and to prevent bloating.

6. Cooking the Dosa: Heat a dosa pan or a flat, non-stick skillet over medium heat. Pour a ladleful of batter onto the pan, spreading it in a circular motion to create a thin, even layer. Let it cook for about 2 minutes on one side until it becomes golden brown. Flip it over and cook for another minute. Repeat the process with the remaining batter.
